Chocolate Peppermint Doughnuts

You will need:

For doughnuts
½ cup brown sugar
¼ cup sugar
1 cup flour
1/3 cup cocoa powder
1 tsp baking powder
½ tsp baking soda
½ tsp salt
¼ cup vegetable oil
1 egg
½ cup milk
½ cup boiling water
¼ tsp peppermint extract

For glaze:
1 ½ cups powdered sugar
2 TBSP milk
1 cup CandyCaneCrunch

Chocolate Peppermint Doughnuts


1. Preheat oven to 350˚F. Grease a doughnut pan with cooking spray.
2. In the bowl of a stand mixer, combine brown sugar, sugar, flour, cocoa powder, baking powder, baking soda and salt.
3. In another mixing bowl, whisk together the oil, egg and milk.
4. With the mixer on LOW, gradually add the liquid to the dry ingredients just to combine. Then add the hot water and the peppermint extract to develop a thin batter.
5. Pour batter into prepared pan. Do not fill more than 2/3 of the way, and make sure batter is not covering the nub in the center of each doughnut. Bake for 10 to 12 minutes or until a toothpick tests clean.
6. Remove from oven and allow to cool in pan for 10 minutes. Doughnuts will release more easily at that point.
7. Measure CandyCaneCrunch onto a rimmed plate. While the doughnuts cool, combine powdered sugar and milk with a whisk. Dip cooled doughnuts into the glaze and immediately into the CandyCaneCrunch. Place onto a serving platter and allow the glaze to firm before enjoying.
